Turkish Menemen (Tomato & Egg Scramble)

Easy and different breakfast idea : Turkish Menemen (Tomato & Egg Scramble)

Ingredients:

  • 2 tablespoons vegetable oil

  • 1 small onion, finely chopped (optional but highly recommended)

  • 3 green peppers (stems and seeds removed, finely chopped)

  • 3 medium tomatoes (peeled and finely diced)

  • 1/4 teaspoon salt

  • 3 eggs

  • Optional: about 1/4 cup shredded mozzarella or mild cheddar cheese

Instructions:

  1. Heat the vegetable oil in a pan over medium heat.

  2. (Optional but delicious:) Add the chopped onion and sauté until translucent.

  3. Add the chopped green peppers and continue to sauté until they soften and begin to change color.

  4. Add the peeled and diced tomatoes. Lower the heat, cover the pan, and let the tomatoes cook until fully softened.

  5. If the tomatoes stick to the pan without releasing much juice, add a splash of hot water—though it’s usually not necessary.

  6. Once the tomatoes are cooked and saucy, add the eggs. Either whisk them beforehand or crack them directly into the pan and stir gently.

  7. Add salt and any spices you like (e.g., black pepper, paprika).

  8. If using cheese, sprinkle it over the eggs at this stage and allow it to melt as the eggs finish cooking.

  9. Serve hot with fresh bread.

🧅 Tip: Adding sautéed onions gives a sweeter, deeper flavor and is a great variation!
