Mustard Potato Salad Recipe (Vienna Style)

Ingredients:

• 8 fresh potatoes (1 lb)

• 4 tbsp mustard (1.8 oz)

• 8 tbsp mayonnaise (3.5 oz)

• 5 sprigs parsley leaves

• 3 green onion

• 2 garlic cloves, minced

• Extra virgin olive oil

• Salt & black pepper to taste

Instructions:

1. Boil the Potatoes: Wash and boil the potatoes until fork-tender. Let them cool slightly, then cut into bite-sized pieces.

2. Prepare the Dressing: In a bowl, mix mustard, mayonnaise, salt, and black pepper. Slowly drizzle in olive oil while stirring to create a smooth sauce.

3. Combine the Ingredients: Add minced garlic, finely chopped green onions, and parsley leaves to the potatoes.

4. Mix and Serve: Pour the dressing over the potatoes and gently toss to combine. Allow the salad to cool before serving.

5. Enjoy! Serve chilled or at room temperature.
