Chicken Orzo Salad with Chips
Easy Appetizer Series: Chicken Orzo Salad with Chips
*Ingredients:*
- 1 lb chicken breast, diced
- 1 cup orzo
- 2 tbsp olive oil
- 4 cups chicken broth (reserved from boiling the chicken)
- 1 cup plain yogurt
- 1/2 cup mayonnaise
- 2 cloves garlic, minced (optional)
- Salt to taste
- 1 bag of chips (for topping)
*Instructions:*
1. *Cook the Chicken:* Dice the chicken breast and boil it until fully cooked. Reserve the broth for later use. Shred the cooked chicken.
2. *Prepare the orzo:* In a pan, heat the olive oil and sauté the orzo for 2-3 minutes. Add enough chicken broth to cover the orzo by about an inch. Add salt, cover, and let it cook like rice until the barley is tender and the liquid is absorbed.
3. *Make the Dressing:* In a bowl, mix the yogurt, mayonnaise, minced garlic (if using), and salt to taste.
4. *Combine Ingredients:* In a large bowl, combine the shredded chicken, cooked orzo, and the dressing. Mix well.
5. *Prepare the Chips:* Crush the chips in the bag without opening it to release stress. Sprinkle the crushed chips over the salad just before serving to keep them crispy.
