Easy Chicken Shawarma at Home

Ingredients:

• 8 boneless, skinless chicken thighs (pounded flat)

• 1 level tablespoon yogurt

• 1 tablespoon olive oil

• 1 teaspoon pepper paste

• ½ teaspoon lemon juice or 1 teaspoon vinegar

• Salt, black pepper, cumin, sumac, thyme, red pepper flakes, garlic powder (to taste)

• 1 small red onion, sliced into half-moon pieces

Instructions:

1. Prepare the Marinade:

In a bowl, combine yogurt, olive oil, pepper paste, lemon juice (or vinegar), and spices. Mix well.

2. Marinate the Chicken:

Add the chicken thighs and red onion slices to the mixture. Use your hands to thoroughly coat the chicken, ensuring the flavors absorb well.

3. Assemble the Loaf:

Grease a loaf pan (8x4 inch recommended) and layer the marinated chicken pieces inside, pressing down firmly to compact them.

4. Bake:

• Cover the loaf pan with parchment paper and bake at 350°F (180°C) for 25 minutes with the fan setting on.

• After 25 minutes, remove the parchment paper, turn off the fan setting, and bake on the top and bottom heat setting for another 20 minutes.

5. Rest & Serve:

• Once cooked, let the chicken loaf rest before slicing.

• Cut into medium-thick slices or thin slices like döner/shawarma.

• Serve over bulgur pilaf, in flatbread with salad, or alongside yogurt.
