Strawberry Grapefruit Aperol Spritz

Strawberry Grapefruit Aperol Spritz (Batch Cocktail for 12!)

Ingredients:

• 1.5 cups Aperol

• about ½ cup strawberry simple syrup

• about ½ cup grapefruit simple syrup

• two full 750ml bottles of prosecco

• 7.5 cups club soda

• about 8 cups of ice when ready to serve

• slices of grapefruit for garnish

To make the simple syrups:

• Combine 1 cup of water + 1 cup of sugar in a pot

• Add a big handful of fruit (strawberries or grapefruit)

• Simmer on low until sugar dissolves, stir occasionally

• Let cool completely with fruit still in

• Strain and store in a sealed bottle in the fridge (up to 1 month)

To serve:

Pour over ice and garnish with a grapefruit slice. Enjoy!
